The Story: From Psychology to Pizza Obsession

 

Founder Enrico Adinolfi, an Italian‑born industrial psychologist, never planned to open a restaurant. What began as a home kitchen experiment grew into a pursuit of heritage and authenticity. He imported South Africa’s first Ooni oven, trained in Naples, and refined his craft under AVPN guidance.

 

“Pizza was never just food for me,” Adinolfi says. “It was emotional, cultural, and deeply personal. Napz is my way of bringing the closest thing to real Neapolitan pizza to Johannesburg.”

 

What Makes It Authentic

 

The AVPN rules are strict: dough must be hand‑stretched, never rolled; pizzas bake in a wood‑fired oven at 450°C for 60-90 seconds; the crust must be blistered and airy, with a soft centre. Ingredients include Italian flour, fior di latte mozzarella, and carefully selected tomatoes. For Adinolfi, process matters more than provenance, quality lies in how ingredients are treated.

 

The Space: Neapolitan Culture in Rosebank

 

Napz is bright and playful, layered with Neapolitan symbolism. Painted plates reference traditional Scopa cards, red cornicello charms ward off bad energy, and Pulcinella, the clever character from Italian theatre, appears in the décor. It feels lived, not imitated.

 

The Menu: Five Pizzas, Done Properly

 

The menu is deliberately restrained:

 

  • Margherita: mozzarella al fiore di latte, Pecorino Romano.

  • Marinara: Roma tomato, garlic, oregano, olive oil, basil.

  • Marita: A blend of both classics.

  • Nduja (Optional) for spice lovers.

 

Here, balance matters more than abundance. The crust is the star, puffy, blistered edges with a delicate centre.
